Baked Salmon Pasta in Tomato Rosemary Sauce Using Airfryer

The haze had still persisted over the weekend and none of us felt like going out. On days like these, I was glad to be able to dig various things out from the kitchen shelves and create a nice warm meal of quick, easy and nutritious salmon pasta for the family. 

Below is an easy recipe adapted for the airfryer. You can also adapt it using whatever you find in your kitchen - mushrooms, carrots, basil or thyme leaves, minced meat, etc. Have fun! :)


Baked Salmon Pasta in Tomato Rosemary Sauce

Serves 4

Ingredients

Tomato Sauce
380ml tomato pasta sauce (I use Barilla Ricotta sauce for the added cheesy taste)
80ml water
3 garlic cloves, chopped
1 large onion, chopped
2 tomatoes, sliced
1 tsp of olive oil

Pasta
1 packet of pasta
Water for boiling the pasta
pinch of salt

Salmon
200g salmon fillet
2 slices of lemon
Dash of pepper
2 fresh rosemary sprigs, chopped

Cheese topping
Parmesan grated cheese

Directions
1. Preheat airfryer at 160 degrees for 3 min.

2. Using a cooking dish that fits your airfryer, saute the garlic in olive oil using the airfryer at 160 degrees for another 3 min. The garlic will turn golden brown.

3. Add onions, tomatoes and the tomato pasta sauce into the cooking dish. Retrieve the remaining pasta sauce from the bottle by pouring the water into the sauce bottle. Add into the cooking dish as well. Continue to cook them in airfryer at 160 degrees for another 5 min, 

4. Meanwhile, in a separate pot, boil some water. Adding the pasta and salt, cook the pasta for 7 min or until al dente.

5. In the airfryer, cook the salmon in rosemary (see recipe here). 

6. When cooked, break up the salmon into pieces, at the same time checking for bones - if any. 

7. Apportion the pasta, salmon and sauce into 4 serving bowls.

7. Generously sprinkle the grated cheese, such that it fills up the top of the bowl. 

8. Airfry at 200 degrees 2 min to melt the cheese. Then another 180 degrees for 2 min, and 160 degrees 4 min to brown the edges. Enjoy! 
Really yummy. Toss it up... and gobble! :)
