Hot Cross Bun-inspired: Cinnamon Wheat Loaf With Raisins and Dried Apricots Using Breadmaker

It is no secret that we love cinnamon (also see Cinnamon Roll recipe). But with our busy workload, I am not ashamed to say that I prefer to take the easy way out by simply dumping all the ingredients into the breadmaker to bake a loaf. 

With Easter coming up in a few weeks' time, we are happy to share our really yummy hot cross bun-inspired quick and easy Cinnamon Wheat Loaf With Raisin and Dried Apricot Using the Breadmaker. We especially love nibbling on the dried apricots which lend a nice chewy effect. And yes, these slices certainly taste like hot cross buns - albeit the flat version! 

Feel free to add other dried fruits and even some walnuts too, if you like. Enjoy!


Cinnamon Wheat Loaf With Raisins and Dried Apricots

Philips Breadmaker HD9045
Yields 750g loaf

Ingredients
(A) 
230ml Hokkaido milk (normal milk is okay too) 
1 egg, beaten 
50g unsalted butter (cut up into fine slices)
1/2 tsp salt
50g fine brown sugar
90g whole wheat flour (see photo below)
90g top flour/ cake flour
270g plain flour
2 tsp cinnamon powder
1 1/4 tsp yeast
(B) 
75g dried apricot, finely chopped
75g raisins


Directions
1) Put all ingredients in (A) into the baking tin, in the above sequence.

2) Use Setting 5 (Sweet bread mode), Medium crust, 750g. 

3) Midway, there will be a short beep. Put all the ingredients in (B) in. 

4) After a total of 3h 22 min (i.e. starting from Step #1), a continuous beep will be heard. The loaf is  now ready. Twist the baking tin gently to remove it from the machine. 

5) Turn the baking tin gently upside down to remove the loaf. Lay the bread out to cool for at least an hour. Store in an airtight container when fully cooled to maintain freshness. Enjoy!
